Frequently Asked Questions & Regional Insights

Why is Ethiopian specialty coffee globally unique?

As the genetic birthplace of all Coffea arabica, Ethiopia possesses unmatched biodiversity, housing thousands of wild, unclassified heirloom varieties.

Unlike single-origins from other countries that rely on specific cultivated varieties, Ethiopian coffee lots derive their flavors from native forest gardens and wild estates. Grown at elite high-altitude elevations ranging from 1,900 to over 2,300 meters above sea level, these beans mature under drastic day-and-night thermal shifts. This slow growth concentrates sugars, resulting in unparalleled flavor complexity, unparalleled clarity, and unmatched cleanliness in the cup.

What are the main flavor differences between Guji, Sidama, and Yirgacheffe?

Southern and western Ethiopia host diverse microclimates, each producing a distinct flavor profile:

  • Guji (including Uraga & Bislaha Lots): Famous for incredibly expressive, fruit-forward profiles. Expect intense, juicy stone fruits (peach), ripe summer berries (strawberry, blueberry), and dense golden honey sweetness, backed by elegant floral undertones.

  • Sidama (including Daye Bensa): Highly balanced and sophisticated, renowned for crisp stone fruit notes, sweet cherry layers, and complex confectionary finishes like toasted almond or dark cocoa.

  • Yirgacheffe: Prized globally for an ultra-clean, tea-like body showing intense citrus zest and heavily perfumed floral aromatics like jasmine and lemongrass.

How does traditional Washed processing compare to Natural processing in Ethiopia?

The post-harvest technique alters the structural traits on the palate:

  • Washed Processing: The fruit is cleanly stripped before the seeds dry on raised African beds. This yields a transparent, light body highlighting crisp floral properties, delicate black tea characteristics, and a pristine finish.

  • Natural Processing: The whole cherry dries intact under the equatorial sun. This allows the seed to absorb intense fruit sugars directly from the mucilage, yielding an incredibly rich, velvety, and round mouthfeel with deep, jammy berry flavors.
